Oh, Dan.....
You KNOW pastries are hi-maintenance.
You gotta have a lotta bread to keep 'em happy, always wanting the flashiest wrapping (it's ALL in the PRESENTATION).
And flours.....LOTS of flours.
And you have to be careful with those seasonal cookies, they just stroll in, act like they own place but after a couple of weeks once you get hooked they sneak off in the middle of the night.
