Some low-vol stores that have a cafe & a Starbucks may have a SBTL & utilize an FSA.
Starbucks MUST have their own TL under the franchise agreement so some stores will have an FSA for the cafe if they can't support two TL positions.
The SBTL would handle TL duties for both (disciplinary actions, reviews, etc).

I know there are stores that have way more GSAs than they should.

For a while, we had at least 7 GSAs. And shockingly, they didn't get very many hours.

601 is used for supplies/items for store use, 549 is team recognition (giftcards, gifts, etc), 979 is guest vibe - things apology coupons or giftcards won't cover (ex: replacement for clothes/property damaged on store premises).

What happens when you don't change the accounts on there? I've seen people just leave that field as is.

Then you could be charging items to the wrong account. Since the default account is 601 for supplies, failing to change it to 549 when you're requisitioning prizes for the team (for example) shorts your account for supplies unnecessarily. It would be like charging your Visa credit card for some items when you should be charging your MasterCard.
